Dabeli, a home-cooked evening snack, served on a steel thali

Dabeliદાબેલી

Dabeli comes from Kutch: a soft bun stuffed with spiced potato, sweet and spicy chutneys, pomegranate, roasted peanuts and sev, then pressed and toasted in butter. The name literally means 'pressed'. It is street food, but easy to make at home.

  • 4 soft pav buns
  • 3 boiled potatoes
  • 2 tbsp dabeli masala
  • 2 tbsp date-tamarind chutney
  • 1 tbsp garlic chutney
  • ½ cup masala peanuts
  • ¼ cup pomegranate seeds
  • Fine sev, coriander and butter

Method

  1. Mash the boiled potatoes with the dabeli masala, a spoon of date chutney and salt.
  2. Spread the filling on a plate and scatter pomegranate, peanuts, sev and coriander over it.
  3. Slit the buns and spread garlic chutney on one side, date chutney on the other.
  4. Stuff with the filling and press sev onto the exposed edges.
  5. Toast on a hot tawa with butter, pressing down, until both sides are golden.
  6. Serve hot with extra sev and pomegranate on top.

Tips

Storing and reheating

An assembled dabeli is not something you keep. Moisture from the chutneys soaks into the pav and within an hour it is soggy. The potato filling keeps two days in the fridge and the masala tastes more settled on day two. Warm it in a pan with a splash of water, then assemble fresh. Keep the sev, peanuts and pomegranate in separate jars.

What you can swap

  • No pav? A burger bun or a thick slice of bread will do. With nothing at all, spread the filling on a plate, pile everything on top and serve it as dabeli chaat, which is how some stalls serve it anyway.
  • If you have no masala peanuts, toss roasted peanuts on a tawa with a teaspoon of oil, red chilli powder and salt for two minutes. Let them cool fully before using; warm peanuts go soft on the filling.
  • Without pomegranate, use finely chopped raw onion. You lose the sweet-sour burst but you keep the crunch and the freshness.
  • For garlic chutney, grind four garlic cloves with a teaspoon of red chilli powder, a pinch of salt and a little water. For the date chutney, dissolve jaggery in tamarind pulp and simmer it down.

What to serve with it

Kutchi dabeli is evening snack food: hot pav, a heap of sev and pomegranate, and a cutting chai or lemon soda alongside. When guests come, the usual way is to make the filling ahead and toast each dabeli in front of everyone.

Mistakes to avoid

  • Do not pack the filling in too thick. The outside of the pav burns before the centre warms through and you get a mouthful of cold filling.
  • Keep the tawa on low to medium. On high heat the butter blackens and the pav crisps outside while staying cold inside. This needs patience, not heat.
  • Never toast pomegranate seeds inside the pav. They burst, release juice and leave the filling wet and sour. Pomegranate always goes on at the end.
  • Do not put sev into the filling and then let the dabeli sit. It goes limp in five minutes. Both the sev pressed on the edges and the sev on top are last-second additions.

Questions people ask

Can I make dabeli masala at home?

You can. Dry roast whole red chillies, coriander, cumin, cinnamon, cloves, bay leaf, fennel and desiccated coconut separately, cool them, then grind fine with salt. The shop-bought blends have the proportions worked out though, so if this is your first time, start with a packet.

What is the difference between dabeli and vada pav?

Vada pav is a gram-flour-battered potato fritter in a bun, and the flavour is hot and savoury. Dabeli filling is not fried; it carries dabeli masala, date-tamarind chutney, peanuts and pomegranate, so the taste is sweet, sour and hot all at once.

My filling turned sour or loose. Can I fix it?

That happens when the potatoes were overboiled or too much chutney went in. Stir the filling in a pan on high heat for two or three minutes to drive off moisture, then add a little more dabeli masala and a pinch of salt. If it is too sour, melt in half a teaspoon of jaggery.
