Methi Theplaમેથીના થેપલા
No Gujarati trip is complete without thepla. These soft, spiced flatbreads made with fenugreek leaves keep well for two to three days without refrigeration, which is why every Gujarati family carries them on journeys. Eat them with yoghurt, chhundo (sweet mango pickle) or just tea.
Ingredients

- 2 cups wheat flour
- 1 cup finely chopped fenugreek leaves
- ¼ cup yoghurt
- 1 tsp ginger-chilli paste
- ½ tsp turmeric, 1 tsp coriander-cumin powder
- 1 tsp sesame seeds, a pinch of asafoetida
- 2 tbsp oil, salt to taste
- Oil for roasting
Method
- Mix everything and knead into a soft dough, adding water as needed. Rest it, covered, for 15 minutes.
- Divide into balls and roll out thin.
- Roast on a hot tawa, brushing both sides with oil, until brown spots appear.
- Stack them and keep covered so they stay soft.
- Serve with yoghurt, chhundo or tea.
Tips
- The yoghurt in the dough is what keeps thepla soft for days.
- For travel, use a little extra oil while roasting so they last longer.
- No fenugreek? Grated bottle gourd or radish leaves work well too.
Storing and reheating
Thepla travel because they keep: roasted properly with oil, they last three to four days at room temperature. Cool them completely before boxing, or steam makes them damp. A week in the fridge. To refresh, give them 20 seconds a side on a dry tawa — no extra oil needed.
What you can swap
- No fresh fenugreek? Use 3 tbsp kasuri methi, crushed between your palms first.
- No curd? Buttermilk or water works, though curd gives a softer thepla.
- Two spoons of bajra flour in the wheat flour gives an earthier, lighter result.
- Grated radish, spinach or bottle gourd all work in place of fenugreek.
What to serve with it
Chhundo, mango pickle and curd are the traditional companions. On a journey, with dry chutney or sev; at home, with hot chai.
Mistakes to avoid
- Do not salt and squeeze the fenugreek. That moisture belongs in the dough.
- Do not knead a stiff dough. Soft dough is what keeps thepla soft.
- High heat spots the outside and leaves the inside raw. Keep it medium.
- Do not stack hot thepla under a lid; the steam makes them soggy.
Questions people ask
How many days do thepla keep?
Three to four days at room temperature if they are well roasted and cooled before boxing, and a week in the fridge. If they are for a journey, be a little generous with the oil; that is what preserves them.
Why do my thepla turn hard?
Usually a stiff dough, too little fat in it, or too long on the tawa. Adding curd and resting the dough for 15 minutes both help.
Are they good for a child's lunchbox?
Yes. Thepla stay soft when cold, which makes them the most practical lunchbox bread there is. Keep the chilli low and pack curd or chhundo alongside.
