Dal Makhani, a home-cooked punjabi dinner, served on a steel thali

Dal Makhaniદાલ મખની

Dal makhani is whole black lentils and kidney beans simmered slowly with butter and cream until the dal turns silky. The recipe is really just patience: the longer it cooks, the better it gets.

  • 1 cup whole urad (black lentils)
  • ¼ cup rajma (kidney beans)
  • Both soaked overnight
  • 2 onions, 3 tomatoes, 1 tsp ginger-garlic paste
  • 3 tbsp butter, ¼ cup cream
  • 1 tsp red chilli powder, ½ tsp garam masala, dried fenugreek leaves
  • Salt and coriander

Method

  1. Pressure cook the soaked urad and rajma with salt for 6-7 whistles until completely soft.
  2. Fry the ginger-garlic paste and onions in butter until golden.
  3. Add tomato purée and cook until the butter separates, then stir in the spices.
  4. Add the cooked dal with its water and simmer for at least 30-40 minutes, mashing some of it against the pan as you go.
  5. Finish with cream, crushed dried fenugreek and a final spoon of butter, then rest 5 minutes.
  6. Serve with naan, roti or cumin rice.

Tips

Storing and reheating

Dal makhani keeps four days in the fridge and a month frozen, and it is one of those dishes that is genuinely better the next day. Loosen it with water or milk when reheating, since it thickens considerably. Add fresh cream only as you serve.

What you can swap

  • No cream? Use milk with a spoon of butter stirred in.
  • No rajma? It works with urad dal alone, though the body is thinner.
  • Crush the kasuri methi between your palms at the end — that single ingredient defines the taste.
  • For a smoky note, heat a piece of charcoal, set it in a bowl in the pot, pour ghee over and cover for five minutes.

What to serve with it

With naan, tandoori roti or jeera rice, plus raw onion, lemon and green chutney.

Mistakes to avoid

  • Do not rush the simmer. The longer it cooks on low, the better it gets; that is the whole secret.
  • Do not leave the tomatoes undercooked; go until the oil separates.
  • Do not add cream to a rolling boil, it splits. Lower the heat first.
  • Salt early and the rajma stay hard. Add it once they are soft.

Questions people ask

Why doesn't home dal makhani taste like a restaurant's?

Time. Restaurants hold it on a low flame for hours, which breaks the urad dal down into creaminess. An hour of gentle simmering at home makes a big difference.

How long should urad dal soak?

At least eight hours, or overnight. Soak it less and it will not cook properly even in a pressure cooker.

Is this an everyday dish?

The butter and cream make it food for guests and festivals. For everyday, make the same dal with less butter and no cream.
