Masala Dosaમસાલા ઢોસા
Dosa has become a regular weeknight dinner in Gujarati homes too. Ferment the batter the day before and dinner is only a matter of making the potato filling and pouring the dosas.
Ingredients
Tap an ingredient to tick it off while you shop or measure.
- 3 cups rice, 1 cup urad dal, 1 tsp fenugreek seeds
- Filling: 4 boiled potatoes, 1 onion
- Mustard seeds, chana dal, urad dal, curry leaves, green chillies
- Turmeric, salt, lemon
- Oil or ghee
- Sambar and coconut chutney to serve
Method
- Soak the rice, dal and fenugreek 5-6 hours, grind fine and ferment 8-10 hours.
- For the filling, temper the spices, fry the onion, then add mashed potato, turmeric and salt and cook 5 minutes.
- Heat the tawa, sprinkle water and wipe it, then spread the batter thin.
- Drizzle oil at the edges and cook until crisp.
- Place the filling in the middle, fold, and serve with sambar and coconut chutney.
Tips
- The tawa must be hot, but cool it slightly with a splash of water before spreading each dosa.
- Thin the batter with water if needed; thick batter gives thick, soft dosas.
Storing and reheating
Dosa batter keeps three days in the fridge and you can draw off a little each morning. It sours as it ages, so by day three the dosas are crisper but sharper. The potato filling keeps two days. Cooked dosas cannot be stored; they should go from pan to plate.
What you can swap
- Short on urad dal? A handful of poha in the batter crisps them up.
- The fenugreek seeds matter for fermentation — even a teaspoon makes a difference.
- No onion in the filling if you prefer; the taste changes but nothing is spoilt.
- Idli rava in place of plain rice ferments more reliably.
What to serve with it
Sambar, coconut chutney and red garlic chutney — all three, or it feels incomplete. Filter coffee alongside in many homes.
Mistakes to avoid
- A pan that is not hot enough makes the batter stick. Flick water on it; the drops should vanish instantly.
- Wipe the pan with a damp cloth between dosas, or the batter will not spread.
- Thick batter cannot be spread thin. Keep it the consistency of buttermilk.
- Never cover the pan; steam destroys the crispness.
Questions people ask
Why aren't my dosas crisp?
The pan was not hot enough, the batter was thick, or it was under-fermented. A little poha or rice flour in the batter also helps.
How long does the batter need to ferment?
Six to eight hours in warm weather, twelve to fourteen in cold. It is ready when it has doubled and the surface is bubbly.
What is the difference between masala dosa and plain dosa?
The batter is identical. A masala dosa is filled with spiced potato; a plain one is not. Many places also smear red chutney inside a masala dosa.
